Join community Herbalist Jessica Rose Lee for plant identification and wild edible tasting in Macedonia Brook State Park in Kent, CT. Learn how to create your own dishes from what you can sustainably forage in your own area.
We will talk about approaching food as medicine and have hands-on medicine making with some of our most nourishing Spring time plants. Participants will take home a foraged food medicine from each class, such as a wild greens salad dressing, floral infused oxymels and more according to which plants are in season. Participants will also be given a variety of recipes from Jess Rose’s collection to take home and explore!
This is a four-part class series that can be taken as a whole or individually. We meet on Saturdays from 1 to 4 pm:
June 4—Dandelion leaves, Wild mustard, Nettle, hopefully some elderberry flowers, black raspberries, Milkweed flowers, yarrow flowers.
July 9—Purslane, Daylillies, St. John’s Wort flowers, Chickweed, Wild garlic, roses
August 20—Crab apples, Wood Sorrel, Medicinal Mushrooms, Elderberries, Sheep Sorrel, Mint, Dandelion, Primrose, Chicory
September 10—Rosehips, Goldenrod, Sumac, Medicinal Mushrooms, Sassafras, Curly Dock, Black Walnuts
